- 8 pieces of bread
- 1 finely chopped onion
- 1 tomato, chopped finely (remove the seeds)
- 1/4 cup coarsely chopped red bell pepper
- 14 cup coarsely chopped green bell pepper
- 1/4 cup coarsely sliced yellow bell pepper
- 1/4 cup grated carrot
- Mayonnaise, one cup
- 1 teaspoon sugar
- 1/2 tsp of pepper powder
- Salt to taste
- 1/2 tsp. oregano
- 1 tablespoon of chili flakes
- Tomato ketchup, 1 tablespoon
- Butter as necessary
Method
- Take a bowl, fill it with mayonnaise, tomato ketchup, sugar, salt, pepper, oregano, and all the vegetables. Mix thoroughly and reserve.
- Bread edges should be trimmed.
- Take the bread slices and cover them with butter.
- Spread the prepared mayonnaise mixture on the bread slice and top with a slice of buttered bread.
- Serve after cutting into triangle or square shapes as desired.
Note: The sandwich can alternatively be grilled and served hot.
Other vegetables can be added, including your favorites like cucumber, baby corn, sweet corn, cabbage, and zucchini.
If you favor acidic flavors, you can increase the amount of tomato ketchup in the mixture.
